For the tacos
Tortillas (corn preferred, or flour)
2 lbs grilled pork shoulder
1/2 pineapple
1 medium red onion
1 jalapeño pepper
1 bunch fresh cilantro
2 limes
For the corn side
16 oz thawed frozen corn
3 tablespoons mayonnaise
3 ounces Cotija cheese
2 tablespoons lime juice
2 tbsp chopped jalapeño peppers
1/2 c chopped cilantro leaves
3 tbsp chopped red onion
2 cloves garlic, minced
1 tsp chili powder
olive oil, salt and pepper
